  • 1 pound large shrimp (peeled and deveined)
  • 4 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 large lemon (zest and juice)
  • ½ teaspoon red pepper flakes (adjust to taste)
  • Salt (to taste)
  • Freshly ground black pepper (to taste)
  • 5 cups fresh spinach (about 4 ounces, packed)
  • ¼ cup grated Parmesan cheese (for serving)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Set a large pot of water to boil and add a pinch of salt. Once the water is boiling, add the gnocchi and cook according to package instructions until they float to the top (usually 2-3 minutes).
  2. While the gnocchi are cooking, heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium heat. Wait until the butter is melted and begins to foam.
  3. Add the minced garlic and sauté for about 1 minute until fragrant and lightly golden. Be careful not to burn the garlic, as it will become bitter.
  4. Add the peeled shrimp to the skillet and sauté for 3-4 minutes until they are pink and cooked through. Be careful not to overcook them, as they will become tough.
  5. When the gnocchi are done, use a slotted spoon to transfer them directly to the skillet with the shrimp. The cooking water will help create an emulsified sauce.
  6. Add the lemon zest and juice, red pepper flakes, and salt and pepper to taste. Toss everything well to coat the gnocchi and shrimp evenly.
  7. Add the fresh spinach to the skillet and stir until just wilted, about 1-2 minutes. The spinach should be bright green and tender.
