- 300 grams Ravioli (your choice)
- 1 liter vegetable broth
- 200 milliliters cream
- 2 carrots (diced)
- 1 onion (finely chopped)
- 2 garlic cloves (chopped)
- 100 grams spinach (fresh or frozen)
- 2 tablespoons olive oil
- Salt (to taste)

- Fresh herbs (basil or parsley for garnish)
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat (about 2 minutes). Make sure the oil is hot but not smoking.
- Add the finely chopped onion and sauté for about 3-4 minutes until soft and translucent. Stir occasionally to prevent burning.
- Add the chopped garlic and diced carrots, and sauté everything together for another 3 minutes until the garlic is fragrant.
- Pour 1 liter of vegetable broth into the pot and bring the mixture to a boil (about 5 minutes). Ensure the broth is bubbling vigorously.
- Once the broth is boiling, add the ravioli and cook according to package instructions, usually about 4-5 minutes.
- Reduce the heat and stir in 200 milliliters of cream. Let the soup simmer for another 2-3 minutes until it thickens slightly.
- Add the spinach and continue to cook for 1-2 minutes until the spinach has wilted. Stir well to combine everything.
- Season the soup with salt and pepper to taste and serve hot in bowls, garnished with fresh herbs.
